Balsamic Glazed Chicken with Roasted Figs:
Ingredients:
- 4 chicken thighs (bone-in, skin-on)
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 cup fresh figs, halved
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 1 teaspoon Dijon mustard
- Fresh rosemary sprigs, for garnish
Instructions:
Preheat the oven to 375°F (190°C).
Season the chicken thighs with salt and pepper on both sides.
Heat olive oil in an oven-safe skillet over medium-high heat. Add the chicken thighs, skin side down, and sear until golden brown, about 4-5 minutes. Flip the thighs and sear for an additional 2 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, melt butter over medium heat. Add the halved figs and cook for 2-3 minutes until slightly caramelized.
Meanwhile, in a small bowl, whisk together balsamic vinegar, honey, and Dijon mustard.
Return the chicken thighs to the skillet, placing them on top of the figs. Pour the balsamic mixture over the chicken and figs.
Transfer the skillet to the preheated oven and roast for 20-25 minutes or until the chicken is cooked through and the glaze has thickened.
Remove the skillet from the oven and let the chicken rest for a few minutes.
Serve the chicken thighs with the roasted figs, spooning the balsamic glaze from the skillet over the top.
Garnish with fresh rosemary sprigs for added fragrance and presentation.
